Un émulsifiant est une substance qui aide à mélanger deux liquides non miscibles (comme l'huile et l'eau) en une émulsion stable. Les émulsifiants réduisent la tension superficielle et créent une barrière entre les gouttelettes pour éviter la séparation.

Les émulsions huile dans l'eau (O/W) ont des gouttelettes d'huile dispersées dans l'eau (p. ex., lait, lotions). Les émulsions eau dans l'huile (W/O) ont des gouttelettes d'eau dans l'huile (p. ex., beurre, crèmes épaisses). Le choix dépend de votre produit et de la texture souhaitée.
